Grape molasses

Zaal produces grape molasses (also known as grape syrup, pekmez, dibs or shireh angoor) in Isfahan, Iran. It is made from grapes only, with no added sugar, glucose, molasses, preservatives or colourings, and every batch is laboratory-analysed. We sell it wholesale in our retail glass packs, in bulk packaging and as private label. It is made to order and quoted per order, depending on quantity, packaging and destination.

How our grape molasses is made

Grapes are pressed, and the juice is filtered and concentrated under vacuum at 40–60 °C until it becomes a thick, spoonable syrup. It is never boiled, so the natural colour and taste of the grapes are better preserved, with no burnt notes. Nothing is added at any step.

Production starts after an order is confirmed, so every shipment comes from a fresh batch with its own laboratory report.

Two styles to choose from

Our range includes classic grape molasses and an Arabic-style grape molasses. They differ in body and taste. Ask for samples of both to compare them in your recipe or on your shelf.

Why food businesses use it

Grape molasses is a natural sweetener that also brings colour and a deep fruit flavour. Bakers use it in breads, cookies and fillings. Breakfast brands blend it with tahini, and cafés mix it with sparkling water as a natural soft drink. On a label, the ingredient list is just one word: grapes.

Grape molasses

Frequently asked questions

Does your grape molasses contain added sugar?

No. It is made from grapes only, with no added sugar, glucose, molasses, preservatives or colourings.

Is grape molasses the same as pekmez?

Yes. Grape molasses is called pekmez in Turkey, dibs in Arab countries and shireh angoor in Iran. All of these are grape juice concentrated into a thick syrup; thickness and taste vary by producer.

What is the minimum order quantity?

It depends on the packaging, because retail glass packs and bulk packs have different minimums. Tell us the quantity you need and we will quote what is possible.

Can you supply private-label grape molasses?

Yes. Private label is available on request; the label, pack and quantity are agreed per order.

How is quality verified?

Every production batch is laboratory-analysed, and we can send the report with your quote or samples.

How should grape molasses be stored?

Keep it closed in a cool, dry place away from sunlight and heat. Natural syrups without preservatives can crystallise over time; gentle warming restores the texture.
