Mulberry molasses

Zaal produces mulberry molasses (also called mulberry syrup, dut pekmezi or shireh toot) in Isfahan, Iran. It is made from mulberries only, with no added sugar, preservatives or colourings, and every batch is laboratory-analysed. Mulberry juice scorches easily, so we concentrate it under vacuum at 40–60 °C, without boiling, to protect the taste. We supply it wholesale in retail glass packs, bulk packaging or under private label, made to order.

Why mulberry molasses takes longer to make

Mulberry juice burns at high temperatures and loses its taste. That is why, like all Zaal syrups, it is concentrated under vacuum at 40–60 °C and never boiled. The result is a smooth syrup with a clean mulberry flavour.

Like all our syrups, it is made from the fruit alone, and production starts after your order is confirmed.

A distinctive product for your range

Mulberry molasses is less common than grape or date syrup, which makes it a good addition for delicatessens, health-food stores and breakfast brands that want something different. Its mild sweetness pairs well with tahini, yoghurt and nut butters.
